Brown Butter Honey Cornbread Muffins
A nod to Chicago’s cornbread roots with a sweet twist using honey and brown butter.
Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- ½ teaspoon salt
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ cup unsalted butter (browned)
- ⅓ cup honey
- ⅓ cup brown sugar
- 1 cup buttermilk
- 2 eggs
Directions
Brown the Butter:
- Melt butter in pan over medium heat until golden brown and nutty-smelling. Let it slightly cool down.
Make the Batter:
- In a bowl, whisk cornmeal, flour, salt, baking powder, and baking soda.
- In another bowl, mix brown butter, honey, brown sugar, buttermilk, and eggs.
- Combine wet and dry ingredients.
Bake:
- Preheat oven to 375°F (190°C). Line a muffin tin.
- Fill muffin cups ¾ full and bake for 15-18 minutes.
Cool & Serve:
- Let cool and enjoy with honey butter!
