Sear the Beef:
Heat olive oil in a pot over medium-high heat.
Sear the beef on all sides.
Slow Cook:

Cover and cook on low for 8 hours (or high for 4-5 hours) until fork-tender.
Shred and Serve:
Shred the beef with forks and return to the broth.
Toast the rolls, fill them with beef, and top with giardiniera.
